2 chicken breasts
1 red pepper
1 yellow pepper
2 red onions
100g leithal southwestern seasoning
50ml loco motive
Salt and pepper to taste
De-stone and peel avocados
Place all ingredients in a bowl and mash with a fork
Butterfly the chicken breasts. Marinade in a bowlwith the spices and oil, closing film bowl and place in fridge leave to marinade for 2-3 hours
Finely slice peppers and onions
Turn oven on to 180c.
Heat a large frying pan on a high heat. When hot add chicken and sear till golden brown on each side.
Place on tray in oven for 8. Mins
In same pan fry you peppers and onions till soft and lightly caramelised.
Remove chicken from oven and allow to rest for 3 mins. When rested slice into strips and add to your peppers and onions
Season to taste with southwestern rub and enjoy with garnishs and guacamole
