
Ingredients:
75ml lothiathan

50ml soy sauce
50g gochujang
20g miso
25ml sesame oil
250g stir fry beef
100g cornflour
1/2 tsp salt
2tbsp sesame seeds
1 litre of oil for deep frying
Process:
1. Mix lothiathan, soy, gochujang,miso and sesame oil.
2. In a bowl mix the cornflour and beef
3. Heat the oil in a heavy based pan till it reaches 180oC
4. Shake off excess flour from beef and fry in batch’s till crispy. Be careful of hot oil splashes.
5. Toss beef dressing and seeds in a bowl season to taste
Rice
200g glutinous rice
1-2 tsp salt
1. Soak rice for 2+ hours
2. Drain water cover with fresh water,
3. Put in a pan and cover with 400ml water and salt
4. Bring to boil and boil for 5 mins
5. Take off the heat and cover the pan leave to steam for 15-20 mins
Veg
1 bok choy
4 spears of asparagus(cut in half)
30g sugar snaps
2 stems tenderstem broccoli (cut in half)
3 tbsp sesame oil
Salt to taste
1. Heat a pan till hot
2. Add 100ml water and veg, cover pan and leave on heat for 1-2 mins.
3. Remove from heat and season to taste with sesame and salt
Garnish
1 carrot
4 spring onions
1. Wash and peel veg, slice on julienne with a knife
2. Place in ice water to help crisp
3. Drain and garnish dish
